Todd Cederholm, Managing Principal is a visionary and accomplished leader in the restaurant industry, recognized for his exemplary leadership, entrepreneurial acumen, and strategic foresight. With a career that began at the young age of 11, working alongside his Chef grandfather, Todd's deep-rooted passion for the culinary arts has driven him to achieve remarkable success in a highly competitive field.
A graduate of the prestigious Culinary Institute of America (CIA), Todd moved to New York City post-graduation, where he quickly became a key figure in the city's vibrant restaurant scene. His dedication and talent were instrumental in building some of NYC's most iconic dining establishments. Todd's expertise extends beyond the kitchen as a certified Level I Sommelier, showcasing his comprehensive knowledge of wine and beverages.
Todd's strategic executive experience is marked by his ability to manage over 1,000+ cross-functional staff and oversee $120M+ in P&L across 35+ Restaurants, QSRs, Bars, and multifunctional retail & food markets. His commitment to driving results through the optimization of revenue streams, superior customer service, labor management, and the mitigation of leakage has been a cornerstone of his success.
Currently, Todd serves as the Managing Partner of Playa Betty's and the West Side Comedy Club on the Upper West Side, where he continues to influence the NYC dining and entertainment landscape. During the COVID-19 pandemic, Todd's entrepreneurial spirit led him to identify a critical need to support small businesses. This insight drove him to launch his own Merchant Services Payment company, PayStream, aimed at providing efficient and cost-effective payment solutions to small businesses.
His demonstrated success in overcoming challenges in compact and highly regulated facilities underscores his resilience and innovative approach to problem-solving.
